Lomo Saltado
Ingredients - Four Servings, Medium Spicy Marinade: • 1 lb. beef (skirt, sirloin, tri-tip) cut into strips • 1 garlic clove, minced • 2 tbsp rice vinegar • 2 tbsp soy sauce • 2 tbsp olive oil • 1 tsp ground cumin Stir-fry: • 1 large red onion cut into thick slices (stem to root) • 2 large roma tomatoes cut into wedges • 1/2 bag of frozen fries • ground paprika Green sauce: • 1 large bunch of cilantro, leaves separated from stems • 1/3 cup of mayonnaise • 1 lime, juiced • kosher salt • 2 fresh jalapeƱo peppers or serranos Instructions Mix all of the ingredients for the marinade in a large bowl and add the steak. Let it rest in the refrigerator for at least an hour. Prepare the sauce by blending 3/4 of the cilantro leaves, mayonnaise, lime juice, kosher salt, and peppers in a food processor or blender.
