Lomo Saltado




Ingredients - Four Servings, Medium Spicy


Marinade:
• 1 lb. beef (skirt, sirloin, tri-tip) cut into strips
• 1 garlic clove, minced
• 2 tbsp rice vinegar
• 2 tbsp soy sauce
• 2 tbsp olive oil
• 1 tsp ground cumin

Stir-fry:
• 1 large red onion cut into thick slices (stem to root)
• 2 large roma tomatoes cut into wedges
• 1/2 bag of frozen fries
• ground paprika

Green sauce:
• 1 large bunch of cilantro, leaves separated from stems
• 1/3 cup of mayonnaise
• 1 lime, juiced
• kosher salt
• 2 fresh jalapeño peppers or serranos


Instructions

Mix all of the ingredients for the marinade in a large bowl and add the steak. Let it rest in the refrigerator for at least an hour. 

Prepare the sauce by blending 3/4 of the cilantro leaves, mayonnaise, lime juice, kosher salt, and peppers  in a food processor or blender. If necessary, and a couple of spoonfuls of water to facilitate blending. 

Cook the french fries according to package. Once they are done, sprinkle ground paprika on them.

Drain beef. Place one tablespoonful of olive oil in a large wok or non-stick pan. Fry the beef in high heat in a couple of batches and set aside. In the same pan, stir fry the onion for about five minutes. Add the tomatoes and stir for about two minutes. Return the beef to the pan and add the cooked fries. Top with one third of cilantro leaves. Give in a gentle mix and serve with a side of steamed rice and green sauce. 



*Notes - Depending on whether you use regular or low sodium soy sauce and salted or unsalted fries, you may need to add a bit of salt to your finished stir fry. Serrano peppers are spicier than jalapeños. Alternatively, you may choose to make your own fries.
