Blueberry Buckle Cake
It is believed that the name of this cake comes from the idea that as the batter tries to rise while baking, the large amount of fruit weighs it down, causing it to buckle. For this cake, I used Melissa Clark's Summer Berry Buckle with only blueberries. It was great with tea, full of flavor, but not sweet, and a mouth-full of fruit in every bite. The whipped cream on the side added a little bit of creamy texture, but not required to enjoy.
